It wasn’t the pass coverage that beat the Pats, it was the pass rush. In other words, no matter what play Bill or Tom calls, if Brady is sacked or rushed to pass the ball, the play is doomed to fail. The Giants simply played Giants football which matches up well against this Patriot pass offense. If it were any other team, I think the Patriots would be the Super Bowl Champs.
